Harvesting, Preparing, and Cooking Chinese Artichokes (a.k.a. Crosnes)
Last week I featured some links on sunchokes. It is also Chinese artichoke (a.k.a. cronses) harvesting season. I pulled a few up from my garden, but they are a bit small so I’m going to let them keep growing until next year. For any of you growing, harvesting, or buying Chinese artichokes though, here’s a great video that goes from harvesting, through prep, and then to cooking.
